TEMAKI LIKE TAPAS

"I couldn't resist the idea of playing at making your own temaki! For this dish, in the spirit of tapas, there are several ways to put it together - a guacamole with Japanese flavours, a spicy tuna tartare, a mixture of vegetables, crunchy pickles, and confit shiitake to put together in a myriad of combinations!  These can then be paired with sushi rice and crispy nori sheets and eaten however you like.”

Catalan pastry chef extraordinaire, Albert Adrià, is an icon on the gastronomic world stage. His signature style marries tradition with considered innovation. He is best known for contributing to the success of 3 Michelin-star restaurant elBulli with his brother Ferran Adrià. Albert is also an author and an expert in culinary research and development. He currently heads up Enigma in Barcelona and Cakes & Bubbles in London, amongst others. Albert designs refined cuisine that is accessible to all.
