Umami: the origin
For many years, our taste buds recognised only four basic flavours: sour, salty, bitter, and sweet.
It wasn't until the 20th century that umami was discovered in Japan as the "fifth flavour." The term, which means "savoury taste" in Japanese, has since become widely recognised. Today, umami is found in many everyday foods like aged cheeses, mushrooms, and soy sauce. This rich and comforting flavour adds a savoury and intriguing dimension to our dishes.
